Mr T. look up guatemalan shucos. is a Guatemalan street sandwich that I'm sure you can tweak and have fun with on that grill. Shucos is the Guatemalan name for hot dog, but the preparation is also out of the ordinary. Guatamalan Shucos are prepared with toasted bread and guacamole which makes them different from any traditional American hot dog

Just wanted to second all the comments so far MrT! Love how you recreate different dishes from around the world & add your own MrT spin/flair to them! 😊 Also your work ethic is a great example to your staff. There’s no doubt that you have stringent budgetary standards to meet - all commercial kitchens do, but you don’t resort to what many others do, ie buy in pre-made sauces / pre-packaged, pre-cut vegetables such as onions, tomatoes, peppers, salsas, salads etc. which you so often see in other kitchens less busy than yours. And don’t get me started on that liquid egg abomination purchased in cartons. 🥴🤢 . . . . Much rather watch MrT cracking real eggs 😊 Am still waiting to learn your secret on how you cut so many onions without dissolving into tears!! If that was me I’d be on the floor crying! Much admiration & respect 👏👏👏👏
